JACKFRUIT ICE CREAM

I never had an idea of making Jack fruit ice cream, because I could not imagine the jack fruit flavor in ice cream. A friend of my husband gave 2 big jack fruits which were grown in his backyard. Husband told me to try ice cream with it... initially i was hesitant to make this new flavor. But, with his request I tried this ice cream, it came out so soft with an awesome taste.  Here is the recipe which my husband got from his friend.
JACK FRUIT ICR CREAM

WHAT YOU NEED :

Milk - 2 1/2 cups

Ripe Jack fruit, deseeded and chopped - 1 cup

Fresh Cream - 1/2 cup, I used to Amul fresh cream

Corn flour - 2 tbsp

Sugar - 3/4 cup

GMS powder - 1 tbsp, You will get these powders in shops

CMS powder - tbsp, ( I did not add this powder)

Ice Cream essence - 1 tsp


HOW TO MAKE :

Boil the milk in thick bottomed vessel. What i did was I added jackfruit pieces in milk and cooked for a while on low heat. You can add fresh fruits later also without cooking.

Make a paste of corn flour with little milk and keep aside

Mix gms powder and cms powder in little water and keep aside.

Now add fresh cream to the boiled milk, mix well.

Then add sugar, dissolve it continuous  stirring with spoon.

Add ice cream essence, gms and cms powders mix, mix well

Add corn + milk and keep stirring, otherwise lumps will start forming.

Cook for few more minutes stirring continuously. Put off the flame.

If you want to put fresh fruits then add at this stage.

Let it cool.

Blend well in a blender for 10 -15 minutes.

Pour in plastic container and keep the freezer for 5-6 hours.

After 5-6 hours take out the container, then again blend for 15 to 20 minutes. If you blend more your ice cream will be more creamy and soft.

Pour back again in the container, close the lid and keep in the freezer for 5-6 hours or till it is set.

Serve Jack Fruit ice cream as deserts in bowls.

BREADFRUIT / JEEVKADGI PODI

Podi is Konkani word for fried item, the masala is mainly based with rice paste or rice powder. I have posted the same recipe earlier, but this is the easier way of making the Podi for Podi lovers.
BREADFRUIT PODI

WHAT YOU NEED:

Breadfruit - a small one but grown well

Rice powder - 1/2 cup

Red chilli powder - 1 tsp or to taste

Salt - to taste

Asafoetida - diluted in water, 1 tsp
JEEVKADGI PODI


HOW TO MAKE:

Wash breadfruit well and cut in rounds, about  1/4 inch thick.

Cut in triangular shape.

Now in a mixing bowl, add rice powder, chilli powder and salt. Mix well.

Put the breadfruit pieces in the mixing bowl and mix thoroughly. Add asafoetida, mix it again.

Sprinkle a little water over it, and see that all the pieces were covered with powders.

Heat enough oil in kadahi for deep frying.

Fry the marinade pieces in batches on both sides till they are crisp, on a moderate heat.

Serve immediately, after some time it will become soggy.

CORN UPKARI /USLI

Try this recipe for breakfast, lunch, dinner or evening snack. Very healthy and nutritious recipe for the growing kids.
SWEET CORN UPKARI / USLI

WHAT YOU NEED:

Corn - 2 cups, boiled

Red chilly powder - 1 tsp or to taste

Salt - to taste

Dry coconut or fresh coconut - 2tbsp, grated

Curry leaves - 1 sprig

Mustard seeds - 1/2 tsp

Lemon juice - of half lemon

HOW TO MAKE:

Mix red chilly powder, salt and boiled corns and keep aside.

heat a tsp oil in kadahi, add mustards. When it splutters add curry leaves.

Then add boiled corns, coconut gratings along with little water.

Cover and cook till all the water absorbs.

Finally add lemon juice.

Serve Corn upkari/ Usli along with hot tea or coffee.
