JACKFRUIT ICE CREAM

I never had an idea of making Jack fruit ice cream, because I could not imagine the jack fruit flavor in ice cream. A friend of my husband gave 2 big jack fruits which were grown in his backyard. Husband told me to try ice cream with it... initially i was hesitant to make this new flavor. But, with his request I tried this ice cream, it came out so soft with an awesome taste.  Here is the recipe which my husband got from his friend.
JACK FRUIT ICR CREAM

WHAT YOU NEED :

Milk - 2 1/2 cups

Ripe Jack fruit, deseeded and chopped - 1 cup

Fresh Cream - 1/2 cup, I used to Amul fresh cream

Corn flour - 2 tbsp

Sugar - 3/4 cup

GMS powder - 1 tbsp, You will get these powders in shops

CMS powder - tbsp, ( I did not add this powder)

Ice Cream essence - 1 tsp


HOW TO MAKE :

Boil the milk in thick bottomed vessel. What i did was I added jackfruit pieces in milk and cooked for a while on low heat. You can add fresh fruits later also without cooking.

Make a paste of corn flour with little milk and keep aside

Mix gms powder and cms powder in little water and keep aside.

Now add fresh cream to the boiled milk, mix well.

Then add sugar, dissolve it continuous  stirring with spoon.

Add ice cream essence, gms and cms powders mix, mix well

Add corn + milk and keep stirring, otherwise lumps will start forming.

Cook for few more minutes stirring continuously. Put off the flame.

If you want to put fresh fruits then add at this stage.

Let it cool.

Blend well in a blender for 10 -15 minutes.

Pour in plastic container and keep the freezer for 5-6 hours.

After 5-6 hours take out the container, then again blend for 15 to 20 minutes. If you blend more your ice cream will be more creamy and soft.

Pour back again in the container, close the lid and keep in the freezer for 5-6 hours or till it is set.

Serve Jack Fruit ice cream as deserts in bowls.

MANGO ICE CREAM

When the mercury goes up, we start sweating; when our throat dries up.... surely we'll feel to drink cold drinks or even eat ice creams which is the best thing to make you relieve from the dryness of throat. Some time back i saw my FB friend Vidya Nayak Sheoy's repeated ice cream posts, which were tempting me. She adapted the recipe from my another FB friend Nandini Kini's page Kini's Kitchen. I thank both of them for this inspiration. The recipe goes like this..
MANGO ICE CREAM

WHAT YOU NEED:

Toned milk - 1 cup

Milk powder - 1 cup

Fresh cream - 1 cup ( recipe says 1/2 cup)

Mango pulp - 1 cup

Sugar - 1/2 cup

MANGO ICE CREAM

HOW TO MAKE:

First I kept milk and mango pulp in the freezer till they became semi solid.

Then in a blender I added all the ingredients in blender and blended till it becomes smooth.

Empty the contents in plastic container and I kept in the freezer for 2-3 hours.

Again I blended for 15 minutes in a blender or till it is smooth and fluffy.

Then I poured the contents back in the container and kept in the freezer for 7-8 hours.

Ice cream ready to serve.

CUSTARD APPLE ICE CREAM

Yesterday my husband brought a lot of custard apples from the market. My both the daughters love this fruit very much so he keeps bringing, for them. This time he brought ripe and a lot were there.  So I thought trying some sweet dishes but in the end I changed my mind and tried my own recipe. It came out so good, soft and smooth. My hubby and Driti loved this and had many bowls. Me too ..:)


CUSTARD APPLE ICE CREAM

WHAT YOU NEED:

Milk - 500 ml + 2 cups
Sugar - 10 - 12 tbs
Custard Apple - 2 ( it makes 3/4 cup pulp along with seeds)
Corn Flour - 2 tbsp
GMS Powder - 2 tbsp ( these powder available in the market)
Alginate S4 ( ice cream stabilizer ) - 1/4 tsp
Fresh cream - 1/4 cup
CUSTARD APPLE ICE CREAM

HOW TO MAKE:

Heat 2 cups milk along with Custard apple's pulp with seeds. 
Cook custard apple  till the milk  becomes from 2 cups to 1 3/4 cups.
Allow it to cool.

Take 500 ml milk and keep 2 tbsp milk separate.
Mix cornflour in 2 tbsp milk and make paste.

Now heat remaining milk and add sugar, gms powder, alginate powder and stir well.
When milk starts boiling add cornflour paste and keep stirring.
Allow it to cool.

Now remove the seeds from the custard apple pulp.
Mix this in the cooled milk.

Refrigerate this mixture for 2 hours.

After 2 hours blend this mixture well in a blender.
Keep in the freezer for 3-4 hours.
After taking from the freezer blend it again for 5 minutes.

Pour the mixture in a aluminium flat vessel, cover and keep in the freezer till it is set or firm.

Serve Custard Ice cream in a bowl with chopped nuts.

ICE CREAM WITH FRUITS N NUTS

WHAT YOU NEED:
 Milk 1/2 ltr
 Corn flour 1 1/2 tbsp
GMS powder 1 1/2 tbsp,
 Alginate S4(ice cream stabilizer),1/8 tsp
Vanilla essence 8 drops
8 tbsp of sugar. 1/2 cup fresh cream.




HOW TO MAKE:
 Boil the milk till it bcomes hlaf of the original volume.
In a bowl mix corn flour, gms and alginate powder in a littlel milk.
Then add sugar to the cooled milk and boil it again. add the mixture of cornflour, and powders to the boiled milk and lower the heat and stir it continuosely .
When it bcomes thick turn off the gas, keep stirring i for few minutes.
When it comes to room temprature pour it in a container. and keep in the fridge for few hours.
 After 2,3 hours take it out and add vanilla essence , abt 8 drops and add fresh cream to it and blend it smooth and fluffy.
 Then keep it in the freezer for another 2,3 hours, again take it out and blend the mixture in a blender and add nuts of your choice, almonds, cashews or pistachious bits...then keep it in the freezer for 5,6 hours. while serving  make fruit salad with nendra banana,apple and mango and bits of dairymilk chocolates.
