AAM SAAT

Aam saat is my childhood memory, my grandmother used to prepare this when we were small children. I loved it eating like candy. Since it is mango season we started getting lots of mangoes from our backyard mango tree. The mangoes are very big and juicy and also sweet. We need not to add sugar in this Aam saat. But I added very little sugar to it when i put it for drying under the sun. Here the recipe goes..
AAM SAAT

WHAT YOU NEED :

Ripe mangoes - 2 +2

Sugar - to taste

Cardamom powder (optional)

HOW TO MAKE:

 Take the pulp from 2 mangoes , squeeze well or you can make its puree.

Heat mango puree and keep stirring till it becomes little hard about 10-15 minutes on medium heat.

when cold spread thin over a plastic sheet or tray and keep under the sun for 2 days. If the sunlight is very strong then i think one day is enough.

Again make the same procedure of other two mangoes. 

sprinkle sugar and cardamom powder over the first spread.

When the mango pulp is cooled spread thin over the first spread. Keep under the sun. 

When Aam saat is dried remove from the sheet and cut with sharp knife.

RIPE MANGO RASAM

Lot of mangoes lying in my kitchen and i have no idea that what I can make. I have already prepared many dishes but still there are many. Today i tried my own version of rasam. I have not tried mango rasam with rice. I just had it like any other soup, so you can call it soup also.
RIPE MANGO RASAM

WHAT YOU NEED:

Mango pulp - of 1 mango (1/2 -3/4 cup)

Tamarind pulp - 3-4 tsp

Pepper corns - 10-12

Jaggery - a small piece

Salt - to taste

Coriander leaves - 1 tbsp, finely chopped
MANGO RASAM


HOW TO MAKE

Mix mango pulp and 2-3 cups water and heat on medium heat.

Add tamarind pulp, crushed pepper corns, Jaggery and salt

Allow to boil for 5 to 10 minutes.

If you want very thin rasam you can add water.

Now put off the gas.

Finally add finely cut coriander leaves.

Serve hot in bowls.

MANGO ICE CREAM

When the mercury goes up, we start sweating; when our throat dries up.... surely we'll feel to drink cold drinks or even eat ice creams which is the best thing to make you relieve from the dryness of throat. Some time back i saw my FB friend Vidya Nayak Sheoy's repeated ice cream posts, which were tempting me. She adapted the recipe from my another FB friend Nandini Kini's page Kini's Kitchen. I thank both of them for this inspiration. The recipe goes like this..
MANGO ICE CREAM

WHAT YOU NEED:

Toned milk - 1 cup

Milk powder - 1 cup

Fresh cream - 1 cup ( recipe says 1/2 cup)

Mango pulp - 1 cup

Sugar - 1/2 cup
BENEDETT ALPHONSO, FROM OUR GARDEN

MANGO ICE CREAM

HOW TO MAKE:

First I kept milk and mango pulp in the freezer till they became semi solid.

Then in a blender I added all the ingredients in blender and blended till it becomes smooth.

Empty the contents in plastic container and I kept in the freezer for 2-3 hours.

Again I blended for 15 minutes in a blender or till it is smooth and fluffy.

Then I poured the contents back in the container and kept in the freezer for 7-8 hours.

Ice cream ready to serve.

MANGO PICKLE / KOTLA NONCHE


WHAT YOU NEED:

Raw mango - 1 small ( cut in to small pieces)

Ginger - 1 tsp, chopped finely

Dry Red chilly - 12- 14

Turmeric powder - a pinch

Fenugreek seeds - 4-5, dry fried

Asafoetida - 1 big pinch

Mustard seeds - 1/2 + 1/4 tsp 

Oil - 1/2 tbsp

Water - 1/4 cup, boiled and cooled

Salt - to taste

 MANGO PICKLE / KOTLA NONCHE




HOW TO MAKE:

Grind red chiily, asafoetida, 1/2 tsp mustard, fenugreek seeds, turmeric powder and salt to a fine powder. 

Now add little water and grind again to a fine paste.

Transfer this paste in a small bowl, mix mango and ginger pieces. Add water for the gravy if needed.

Heat oil in a pan, splutter mustard seeds and pour over mango pickle. Mix well.

Keep it over night. Consume within 4-5 days.

MANGO MINTY DRINK

One more refreshing drink on hot sunny days..
MANGO MINTY DRINK

WHAT YOU NEED:

Mango pulp - taken from 1 big mango

Mint Leaves - 8-10 leaves

Sugar - to taste

Water
COOL SUMMER DRINK! MINT FLAVORED MANGO! 

HOW TO MAKE:

Blend mango pulp, mint leaves and sugar together to a fine paste.

Add water and blend again.

Again  add required water and blend it for few minutes.

Serve chilled Mango minty drink in tall glasses.

GREEN MANGO DRINK / AAM PANNA

We started experiencing summer again here. We feel that the hot sun is just above our head. Only way to beat this heat is having lots of water, fresh vegetable juice, fruit juice etc. This year too we got plenty of mangoes from our mango tree. Aam panna is one of the drinks that I always loved to make It really keeps one's head and body cool!
GREEN MANGO PANNA

WHAT YOU NEED:

Green mangoes - 3
Sugar - 2 cups
Black salt - a little
Roasted cumin seed/ jeera powder
Mint leaves - a few (optional)
AAM PANNA, SUMMER DRINK..

HOW TO MAKE:

Wash and peel the mangoes.
Pressure cook them for 15 minute.
Separate the seeds from mango pulp.
Blend mango pulp, sugar, black salt to a fine paste.
Add some water and blend it again.

Transfer mango paste in a jar.

While serving take 1 part paste (approx 3 tsp)  and 3 parts of water, blend nicely. ( For the better taste use soda instead of water).
You can add mint leaves while blending.
Pour in a tall glass, sprinkle jeera powder and serve chilled.

Store the remaining mango paste in refrigerator.

MANGO CANDY

The weather is too hot and I felt the Sun is burning on my head! I was feeling thirsty too. So thought of making some thing that I keep in my mouth for a long time to avoid the dryness in my throat. Here it is... the Mango candy..

MANGO CANDY

WHAT YOU NEED:

Tang powder, mango flavoured  - 2 tbsp
Sugar - 4-5 tsp / to taste
Fresh cream - 4 tsp , nicely beaten.
Water - as required, to make 2 candies.
TO BEAT THE HEAT, MANGO CANDY!

HOW TO MAKE:

Mix all the above and pour in a long sized mould and keep a stick.
Keep these candies in the freezer for about 5-6 hours.

Kids will love this candy.

MANGO SODA

To beat the summer heat..here is one more mango drink...
MANGO SODA


WHAT YOU NEED:


Mango pulp of  2 mangoes.
Sugar 3-4 tbsp or to taste
Mint leaves a few
Salt a pinch (optional)
Soda 
MANGO SODA+MANGO PULP+SODA KEPT SEPARATELY..

SODA FIZZZZZZZZZZZZZ..COOL COOL...




HOW TO MAKE:


Blend mango pulp, sugar and mint leaves together to a smooth texture.


Refrigerate it for an hour.
Then pour 1/3 of the blended mango in a tall glass and add salt. 
Add 2/3 of soda to it and stir well.
Serve Mango Soda chilled.
