VEG FRIED RICE

This is the most popular dish at Jay's Veg kitchen. Every one's favourite and  i enjoy every time whenever  I prepare  Fried Rice I get  heaps of appreciation  from my husband. Today I  am very happy bcoz I am sharing my recipe of fried rice...:)

WHAT U NEED:
Basumati Rice 2 cups
Water 3 1/2 cups
Carrots 2 finely chopped 
Bell pepper  1 small , finely chopped
Cabbage 1/2 cup, chopped
Beans 10,12 finely chopped

Spring onions 1 bunch, finely cut
Aginimotto 4 pinches
Chilli sauce 3,4 tbsp
vinegar  2 tbsp
Soya sauce 1 tbsp (optional)
Salt to taste
Veg oil 4 tbs
Ghee 1 tbs

HOW TO MAKE:
I use kadahi to prepare fried rice. Never used cooker to prepare rice because we get  different varieties of rice each time, as it needs  different water measurement each time. Some rice cooks fast and some takes time to cook. So I should be careful while adding water. So preparing  in kadahi , is the easier way to check on  the rice...

Wash and soak rice for 15 min.  Drain and keep aside.
Take 3.1/2 cup water in kadahi and keep on the fire. When it  boils, put rice into it and stir it with spatuala.
Add ghee,salt and 2 pinches of ajinomotto to the rice. Once again stir it .
Then lower the heat to simmer, Cover and cook till done. check the rice, if it needs water..add some.
Once the rice is done keep the lid open.

Pour oil in a pan and heat it. Put spring onion. and fry for few minutes.
Add beans, carrots,cabbage and capsicum one by one...add  2 pinches of ajinimoto, salt and stir it.

Pour veges to rice and  mix thoroughly. Add chilli sauce, vinegar and soya sauce. mix well with 2 spatulas holding in both the hands....
